About the data thing: If you have a phone, a pc, etc. Google/apple/microsoft will have your data either way. Take youtube as example. This even records you when you don't notice it to know what to give you for, let's say, add recommendations. So it's not like they'd have a hard time getting something of your voice if they really, really wanted to. So what are they doing with it in your point of view.
